Chocolate Fudge Cake

1. Mix hot water and cocoa powder

2. Add all other ingredients and mix

3. Divide into two 8" sandwich tins

4. Bake 25-30 mins at 160C

5. Cool

Finishing

1. Spread warm apricot jam to seal base and top

2. Mix chocolate and cream in a bain marie then allow to cool until it starts to firm

3. Spread as a filling and topping

4. Keep cool
