Cake
  • 50 g Cocoa powder (Sifted)
  • 6 tbsp Boiling water
  • 3 Eggs (Large)
  • 50 ml Milk
  • 175 g Self raising flour (Sifted)
  • 1 tsp Baking powder
  • 100 g Soft butter
  • 275 g Caster sugar
    • Icing
  • 3 tbsp Jam (Raspberry)
  • 150 g Bournville chocolate
  • 150 ml Double cream

    Mix hot water and cocoa powder

    Add all other ingredients and mix

    Divide into two 8" sandwich tins

    Bake 25-30 mins at 160C

    Cool
    6. Finishing

    Spread warm apricot jam to seal base and top

    Mix chocolate and cream in a bain marie then allow to cool until it starts to firm

    Spread as a filling and topping
