    Cake
  • 225 g Soft butter
  • 225 g Caster sugar (Brown sugar gives a nice dark cake)
  • 1 Grated rind of an orange
  • 5 Eggs
  • 380 g Plain flour
  • 1/2 tsp Baking powder
  • 1 tsp Mixed spice
  • 1 pinch Nutmeg
  • 225 g Currants
  • 50 g Glace cherries
  • 100 g Mixed peel
    • Topping
  • Blanched whole Almonds (As many as needed to cover the top)
    • Optional
  • 5 tbsp Marmalade
  • Replace half the raisins with currants
  • Leave out the cherries to be more traditional
  • Add a splash of Whiskey

    Cream Butter and sugar

    Add the beaten eggs
  3. 3
    Add sieved flour, spices and baking powder
  4. 4
    Mix well
  5. 5
    Add all the other ingredients and mix gently until evenly distributed

    Put into a buttered and lined 8" cake tin. Decorate the top with Almonds in a circular pattern

    Bake in a pre-heated oven for 2 1/2 to 3 hours at 160C (150C fan)

    Test with a skewer, when it comes out clean it's done.

    If it starts to brown, cover it with tin foil.
