Dundee Cake

Instructions

  1. Cream Butter and sugar

  2. Add the beaten eggs

  3. Add sieved flour, spices and baking powder

  4. Mix well

  5. Add all the other ingredients and mix gently until evenly distributed

  6. Put into a buttered and lined 8" cake tin. Decorate the top with Almonds in a circular pattern

  7. Bake in a pre-heated oven for 2 1/2 to 3 hours at 160C (150C fan)

    Test with a skewer, when it comes out clean it's done.

    If it starts to brown, cover it with tin foil.
