Instructions

Add salt and yeast to the flour, don't let the salt touch the yeast

Add the water and sourdough starter to the dry mix

Mix together then kneed for 5 minutes

Cover and leave to rise for 45 minutes

Knock back and shape. Put it in a banneton or on a tray for the second rise of 45 minutes. Flour and cover with a dry clean tea-towel.

Warm up the over to 220C with the empty cast iron casserole dish in it to warm up for 15 minutes.

Turn the loaf out onto baking paper and put it in the cast iron pot

Bake for 35 minutes at 200C with the lid on

Remove the lid and bake for 15 minutes. Turn it down to 180C for a lighter crust
