Preheat oven 220C

Simmer sugar, water and cinnamon for 3 mins

In another pan bring milk and cream to the boil then remove from heat

Mix eggs, vanilla and corn flour in a bowl and whisk until fully combined

Add milk and cream mixture half at a time while whisking. Then put back into pan over low heat and keep whisking until it thickens

slowly add syrup mixture without cinnamon stick

Roll pastry and lice into 12 rounds

Squish into greased muffin tin
-
Fill cases and bake for 20 mins
